3/4 cup water
3/4 cup sugar
1 tsp cocoa powder (do NOT use hot cocoa mix or Nesquik)
1/2 tsp vanilla
1/4 tsp peppermint extract
2 cups half and half (Or make your own! 1 cup whole milk + 1 cup heavy cream)
Make a simple syrup by combining the water and sugar in a saucepan. Over medium-high heat, stir the mixture until the sugar dissolves, about 3-5 minutes. Remove from heat.
Measure out one (1) cup of the simple syrup into a heat safe bowl. Whisk in the cocoa powder while the simple syrup is still hot to help incorporate it. Add your vanilla and peppermint extract. Allow the mixture to cool for 5-10 minutes.
Slowly add in the 2 cups of half and half. Stir well.
Store your creamer in a sealed container in the refrigerator. Use as you would store-bought creamer for festive, creamy, cocoa-minty cheer! Be sure to shake or stir before each use-the cocoa will settle to the bottom.
